We also recommend you keep the cider sauce and whipped feta separate until serving.

While feta in its natural state can be crumbly and messy, whipping it up with some cream cheese and olive oil makes it easy to grab on a cracker. If you don’t like cream cheese, you can try using Greek yogurt as a substitute. Just make sure to choose a thick, full-fat Greek yogurt for the best consistency.

Because feta isn’t overpowering on its own, it pairs well with a variety of ingredients. This whipped feta recipe is a balance of sweet and savory flavors. There’s thyme and garlic in the feta mixture, then it’s topped with a cranberry cider sauce to contrast the fluffy texture and tang of the cheese. 1/3 c. Clarksburg Semi-Sweet Cider
2 Tbsp. honey, divided
1 c. fresh or frozen cranberries
2 tsp. Fresh chopped thyme leaves, divided (1 tsp. if using dried)
6 oz. feta in brine, cut into small cubes
1 clove garlic, grated or minced
6 oz. cream cheese, room temperature
2 Tbsp. extra-virgin olive oil

Step 1
Bring Clarksburg Semi-Sweet Cider to a boil in a saucepan over medium heat with 1 Tbsp of honey.

Step 2
Add cranberries and bring back to a boil. Reduce heat to medium-low and cook, stirring occasionally until the cranberries burst and become a sauce. About 7-8 minutes. Let this mixture cool.

Step 3
While the sauce is cooking, drain the brine from the feta and add to a blender or food processor along with cream cheese, garlic, and thyme.

Step 4
Once the feta mixture is combined, slowly add the olive oil while the blender is running. This will help to get a fluffy, whipped consistency.

Step 5
Add the whipped feta to a bowl and top with the cranberry mixture. Drizzle remaining honey on top.

Step 6
Serve immediately with crackers or cover and refrigerate.*
